This is just a dreamy creamy blend of goodness. Best of all it is a great way to showcase your spring garlic! You know that garlic that you just can not resist checking on and pulling out in the early spring!
What you will need:
2 egg yolks
1 tbsp dijon mustard
1/3 cup sunflower oil or avocado oil
1 tsp salt
2 chopped spring garlic (from the base all the way up to the leaves if you wish)
1 tsp pepper
2 tbsp white wine vinegar
What to do:
Place egg yolks, mustard, and garlic in blender and start blending until mixed well. Then start adding the oil in a very small steady stream, stopping and checking on the consistency often. Once it starts to look like mayonnaise, add the salt, pepper and wine vinegar and continue to blend until mixed and smooth. Place in seal tight container and let sit at room temperature for about an hour and then place in fridge.
This is great smeared on your burger bun or favorite sandwich, or try a dab on that sirloin steak with some seared spring garlic or scapes next to it!
